OMG. Five Minute Freezer Cookies

People.  I've claimed to be a pseudo culinary genius in the past (what IS that, anyway??) with my mousses and such, but these cookies seriously take the cake.  Errrr, uhhhh…

Anyway.  I have a sweet tooth, and usually keep my sweet treats to something more nutrient dense.  Don't get me wrong, sometimes you just need a legit, homemade or bakery-fresh cookie.  But, if you enjoy a post-dinner somethin' somethin' on a more regular basis, I find this does the trick without the extra sugar and refined flours. AND, you get a iFuel high five via a cookie with healthful fat, whole grains and protein.  

Rough recipe guide follows.  Play with ingredients and amounts to get the flavor and consistency that satisfies!

Ingredients: (makes 2 servings)

1/4 c rolled oats 

1/2-1 scoop chocolate or vanilla protein powder

1 Tbsp goji berries or raisins

1 Tbsp PB2

1/2 Tbsp cocoa powder

1/2 Tbsp peanut butter

5 chopped almonds

dash cinnamon

1+ Tbsp  liquid egg whites (SLOWLY add a bit at a time to prevent an overly wet batter)

dark chocolate chips (optional)

1) Stir together dry ingredients.

2) Add peanut butter and slowly add JUST enough egg whites, stirring/mashing until a "dough" is created.

3) Roll into balls.

4) Place on a plate and stick in the freezer for minimum of 20 minutes to firm up.
