Granola Goddess Parfait

Perhaps the title is a little presumptuous, but I started playing in the kitchen with making a quick granola, and the resulting parfait is consistently eliciting taste bud high-fives.  Packed with healthy fat, antioxidants, and protein, this makes for a great training meal.  And, not only does it taste scandalously delicious- it’s fast and easy.  No excuses to fuel clean and eat well, people!  Give ‘er a go, and let me know!


1/4 c rolled oats

1/4 c chopped nuts and seeds (walnuts, almonds, pumpkin or sesame seeds, etc.)

1 tsp agave or honey

1/4 tsp cinnamon

1 Tbsp ground flaxseed

3/4 c frozen mixed berries (slightly thawed stove-top or in microwave-until a little juicy)

3/4-1 c plain Greek yogurt or low-fat plain yogurt (sweetened with sprinkle of Stevia or tsp of honey, if desired)


1) Spray a pan lightly with cooking spray and heat to medium-high heat.  Add first 2 ingredients to the pan and keep a close eye, stirring every minute or so.  Be careful!  The granola can burn easily.  The toasting of the oats and nuts only takes a few minutes. 


2) Transfer granola to a bowl and add the agave/honey, cinnamon, and ground flax.  Stir to combine.


3) Layer the yogurt (again-unless you like it tart, you might want to blend in a little Stevia or honey before whippin’ up the parfait), granola, and juicy berries.
