Chocolate Avocado Protein Mousse

We’re hard-wired to desire and crave savory, sweet, and salty foods (I’ve said it before, but it’s worth repeating, ‘cause it’s pretty hard core).  Our tongues and cheeks revel in the mouthfeel of fat as it melts and deforms in our mouths.  Sweet electrifies our neural circuitry and can instantaneously whisk many of us away to our happy place. 


I’m brilliant.  Let’s stop beating around the bush.  Alright, alright, it’s more accurate to say, I’ve channeled brilliance whilst playing in the kitchen.  Big shout out to Cosmic Creativity. :-)  The following is a tasty concoction that satisfies our hindbrain, while simultaneously eliciting a high five from our neocortex.  Smooth and creamy, sweet and savory, AND full of monounsaturated fats, protein, fiber, and potassium, this is, in the end, a no-brainer. 


The instant coffee and chocolate covered espresso beans aren’t necessary, but if you’re enjoying this as a breakfast or mid-morning meal, it’s a tasty way to get a boost without the Cup o’ Joe.  And, my God.  Chocolate-covered espresso beans??

1/3-1/2 Ripe avocado

1/2 cup Frozen banana slices (sit out for few minutes to thaw a bit)

1/4-1/2 cup Unsweetened almond milk (or cow’s milk if so desired)

1 scoop Whey protein isolate, or egg protein powder

1-1 1/2 Tbsp cocoa powder

1 Tbsp instant coffee (dissolved in small amount of hot water to make a syrup)

Agave to taste (optional)

3-4 Chopped Chocolate covered Espresso beans (sprinkled on top)


Blend all ingredients with an immersion blender (wand/stick blender thingie) or blender. 

(I can’t vouch for the effectiveness of a standard blender, as I have the immersion stick.  You may need to add additional milk to thoroughly blend with a regular blender.  Let me know your experience on that front!  I definitely am an advocate for the immersion blender, as it is extremely easy to clean and is super powerful.  Smoothies, soups-all a breeze!)
